Some of my favorite memories are of my Nana making my sis and I pancakes for breakfast. Damn she made the best ones. What I appreciate even more is that my Nana is Mexican but she still knew how to make pancakes and they were delicious!
From the beginning of my mom life I took pride in homemade things. So, I learned to make pancakes from scratch so I can feed my beautiful children some yummy food.
Last year I began cooking my pancakes on a cast iron griddle and they turn out so yummy this way. Also, cooking on a cast iron adds extra iron to your diet, awesome!
Here is my simple, delicious, old fashioned pancake recipe:

Pancakes

- 1 Cup Flour
- 1 TBSP sugar
- 2 TSP Baking Powder
- Dash Of Salt
- 1 Egg
- 1 Cup Milk
- 2 TBSP Butter +more for cooking
- 1 TSP Pure Vanilla Extract
- Syrup For Serving

- Mix all dry ingredients in a medium bowl.
- Mix in wet ingredients but don't over mix. Add a bit more milk if batter seems too dry.
- Heat up *pan over medium-high heat. Once hot add some butter, then pour in about 1/4 cup pancake batter. Cook for about 2 minutes or until the pancake begins to dry on top. Then flip over pancake and cook for another minute.
- The key is to get your pan to the right temperature so that they cook fast enough to give them a brownish outside but also cook all the way through on the inside.
* I like to cook my pancakes on a cast iron skillet.
