Ingredients
- 1 tbsp Butter unsalted
- 1 tbsp olive oil
- 2-3 shredded Chicken Breasts rotisserie chicken works well
- 1/2 cup diced onion
- 3 diced carrots
- 2 diced celery stalks
- 3 ounces spaghetti pasta* or 1/5 of the regular barilla pack
- 1 bay leaf
- 1-2 sprigs fresh cilantro leaves substitute parsley if preferred
- 5 cups chicken broth I use the broth water I boil the chicken breast in
- 1-2 dashes Garlic Powder
- salt to taste

Instructions
- Melt butter with the olive oil in a pot. Add onions, celery, and carrots. Sauté 5 minutes.
- Add chicken broth to pot and cover. Let it reach boil then break pasta in half and add to pot. Once it reaches a boil again add in shredded chicken, bay leaf, cilantro, garlic powder, and salt to taste. Bring it down to a simmer and cook for 30 minutes or until pasta and veggies are completely soft.
- If it dries up too much add more chicken broth and/or salt if needed. Serve with round crackers or saltines. If you'd like to enjoy it Mexican style serve with warm tortillas and slice some avocado. You can also slice the bottom half of a serrano pepper lengthwise and dip into soup to make it spicey.
