Today I will be sharing with you a delicious healthy pad Thai recipe!
It is like the normal authentic pad Thai only with a little added boost of veggies. I added chicken to mine but you can substitute it for your protein of choice or no protein at all.
Thai food is a family favorite in our household and we usually head to a restaurant to indulge in this deliciousness but I decided to try and make pad Thai at home! And it turned out very yummy 🤤 yay!

- 1 Medium Onion chopped
- 3 garlic cloves Minced
- 1 Tsp ginger Minced
- 2 Carrots Thinly Sliced
- 1 Zucchini Squash Spiralized
- 1/2 Bell Pepper Red or Green
- 2 Eggs
- 1 Tsp Soy Sauce
- 3 Tbsp Rice Vinegar
- 2 Tbsp Fish Sauce
- 3 Tbsp Brown Sugar
- 2-3 Chicken Breasts Sliced
- 1 Lime
- Cooking Oil
- Salt and Pepper
- Pad Thai Noodles

- Prepare: Chop onion, garlic, and ginger. Set aside. Prep carrots, zucchini, and bell pepper. Set aside. Cook noodles according to package directions. I only cooked them for 2-3 minutes in boiling water. Drain, rinse with cold water, set aside. Whisk two eggs in a bowl. Set aside Make Pad Thai Sauce: Mix soy sauce, rice vinegar, fish sauce, and sugar. Set aside. *Note you may need to double this pad Thai sauce recipe if you feel like your dish is too dry.
- Add oil to pan, cook your chicken, and season with salt and pepper. Do not overcook. Remove chicken from pan and drain on paper towels.
- Wipe out pan and add about 2 tbsp oil and sauté onions, garlic, and ginger for 3-4 minutes. Add veggies and cook stirring often until veggies have softened.
- Make a space in the center or side of your pan and add the egg. Allow it to firm up and toss with the rest of the veggie mixture. Then add in the chicken, noodles, and pad Thai sauce. Toss well.
- *If you feel that the mixture needs more sauce then you can make a second batch that pad Thai sauce.
- Squeeze one entire lime juice over and gently toss it all together one more time. Serve hot and garnish with crushed peanuts, an extra lime, and crushed red pepper.
